Ingredients

  • 1 bag mixed leaves
  • 2 bay leaves
  • 9 ounces skinless, boneless chicken breast
  • ¼ cup fat free Greek yoghurt
  • 1 tbsp olive oil
  • 1 ½ tsps thyme
  • 1 tsp grated lemon rind
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 tbsps red onion

    Bring 4 cups of water and bay leaves to simmer in a saucepan. Add the chicken and simmer or until cooked. Drain and discard the bay leaves. Once cooled, shred the chicken.

    In a bowl, combine yogurt, oil, thyme, lemon rind salt and pepper and whisk to mix.

    Finely slice the ed onion. Add it to the bowl with chicken and mix well
  • 4
    Serve on a bed of mixed leaves
