Chicken Cordon Bleu Casserole

Ingredients

  • 1 whole rotisserie chicken (shredded)
  • ½ lb very thin sliced Deli-style Honey ham (Roughly chopped)
  • ¼ lb baby swiss cheese (Thinly sliced)
  • 4 TBS butter
  • 4TBS Flour
  • 3 ¼ cups milk
  • 2 TBS lemon juice (fresh squeezed)
  • 1 ½ tsps salt
  • ½ tsp paprika
  • ¼ tsp pepper
  • 6 TBS Butter (melted)
  • 1 ½ cups Panko bread crumbs
  • ¾ tsp Seasoning salt
  • 1 ½ tsps dried parsley

    Preheat oven to 350 degrees F. Butter a 9"x13" baking dish and set aside

    Place shredded chicken on the bottom of the baking dish.Top wish roughly chopped ham. Lay Swiss cheese on top of ham.

    Preparing the sauce: Melt the butter over medium heat. When butter is melted, quicklly stir in the flour to form a smooth roux. Do not brown. One the roux is smooth and bubbly, slowly add cold milk, stirring continuously. Whisk sauce constantly until thickens. Stir in lemon juice, Dijon mustard, salt and pepper. Bring sauce back to a low boil and turn off heat. Pour sauce evenly over the casserole being certain to get some of the sauce around the edges of the pan.

    For the topping: Melt butter in the microwave for at a time until it is completely melted. Stir in panko breadcrumbs, seasoning salt and parsely. Spread evenly over casserole. Bake casserole for until hot and bubbly. Remove from oven and allow to stand for .
