This is Elaine's carrot cake recipe. Unfortunately it was so delicious that it was all eaten before I had time to take a picture!

Ingredients

  • 200 ml oil
  • 4 eggs
  • 4 tsps honey or golden syrup
  • 8 oz flour
  • 2 tsps baking powder
  • 0.5 tsps bicarbonate of soda
  • 1 tsp vanilla essence
  • 6 oz grated carrot
  • 2 oz sultana
  • Icing

  • 2.5 oz cream cheese
  • 2 tbs butter
  • 12 oz icing sugar
  • 1 tsp vanilla essence

Instructions

Keep screen awake

    Preheat the oven to 190C.

    Whisk the oil, eggs and honey together until frothy.

    Stir in the flour, baking powder, bicarb, vanilla, carrots and sultanas.

    Pour mixture into a greased deep 9 inch cake tin.

    Bake for approximately .

    Beat together the cream cheese, butter , icing sugar and vanilla to make the icing.

    Once the cake has cooled slice it across into two and spread with half the icing mixture. Re-assemble the cake and spread the remainder of the icing on the top.
