Carrot cake is a cake that contains carrots mixed into the batter. The carrot softens in the cooking process, and the cake usually has a soft, dense texture. Carrot Cake can be enjoy as a quick tea time cake. It has a Moist, dense texture. Loaded with the rich taste of cinnamon and a lot of nuts such as raisins and dates. I just love this recipe and m looking forward to sharing it with everyone out there.

Ingredients

  • 1 cup Carrots (grated)
  • 200 gms Butter
  • 200 gms powdered Sugar
  • 200 gms Flour or maida
  • 3 large Eggs
  • ½ tsp Baking Powder (or little less than ½ tsp)
  • ½ tsp baking soda
  • ½ cup Dates (Chopped)
  • milk (if required)
  • Salt (a pinch)

Instructions

    Pre-heat an oven at 200 degree from . Line a baking dish with butter plate and grease it with butter.

    Wash, peel and grate carrots and set aside.

    Sieve flour along with the Baking powder and baking soda and set aside

    In a mixing bowl, cream butter and sugar together using a electric beater, if you have one when the butter and sugar is nice and creamy add the eggs one at a time, mixing each egg till properly incorporated.

    Then add the flour little by little using the cut and fold method. Add the grated carrots to this batter and mix. Add a little milk if the batter is to thick

    Lastly add the dates cashew nut, raisins, cinnamon powder, pinch of salt, vanilla essence and mix properly

    Spoon the batter into the prepared baking dish and bake on 150 to 160 degrees for or till fully cooked. Take out from oven at cool on a wire rack. Cut when the cake is completely cooled. serve with a pot cup of tea and enjoy
