Carrot Cake Bars

Ingredients

  • 1 pkg yellow cake mix (18-¼ oz)
  • 1-¼ cup mayonnaise regular (may not be subsitituted)
  • 4 ea. eggs
  • ¼ cup water
  • 2 tsps ground cinnamon
  • 2 cups shredded carrots
  • 1 pkg cream cheese (softened, 8 oz)
  • 5 tbsps butter or margarine (softened)
  • 4 cups confectioners'sugar
  • 2 tbsps milk
  • 1 tsp vanilla extract

    In a miking bowl, combine the first five ingredients; mix well.

    Pour into a greased 13 x 9 x 2 in baking pan.

    Bake at 350 degrees for or until toothpick comes out clean near the center comes out clean.

    Cool completely on a wire rack.

    For the frosting, in a small mixing bowl, beat the cream cheese and butter until fluffy.

    Beat in confectioners' sugar, milk and vanilla until frosting reaches spreading consistency.

    If carrot decoration is desired, tint a small amount of frosting orange.

    Frost cake with plain icing. Cut into squares. Pipe an orange onto each square; and a parsley sprig for the carrot top.

    Store in the refrigerator.
