Ingredients
- 1 butternut squash (neck only, peeled)
- Olive oil
- Salt & pepper
- 1 cup Brussels sprouts (quartered)
- 1 cup chanterelles
- 1 cup king trumpet mushrooms (halved)
- 1 cup oyster mushrooms
- 4 tbsps olive oil
- 8 fresh sage leaves
- 2 cloves garlic (thinly sliced)
- 1 shallot (thinly sliced)
- 1 cup heavy cream
- ½ cup red wine
- ¼ cup Parmesan cheese (freshly grated)
