Broiled Beef Tenderloin

Ingredients

  • 4-6 lbs beef (tenderloin)
  • salt
  • pepper
  • Bearnaise Sauce

  • 4 eggs (separated)
  • 1 tbsp lemon juice
  • ⅔ c. butter
  • 2 tbsps wine vinegar (white with tarragon)
  • 1 tbsp green onion (chopped)
  • 1 tsp salt
  • ¼ tsp paprika

    Broil beef at moderate temperature, 3-5 in. from heat source on grill for ., depending on doneness desired & size of tenderloin. Turn 2-3 times during cooking.

    In the meantime, prepare BEARNAISE SAUCE: Beat egg yolks & lemon juice together in saucepan with wooden spoon/whisk. Add 1/3-c. butter & stir over low heat till melted.Add remaining butter; continue to heat & stir till butter melts & sauce thickens. Remove from heat & stir in remaining ingredients.

    Season beef with salt & pepper. Serve with Bearnaise Sauce.
