Lots of veggies in this chili. I did this recipe in a 9 qt stock pot and had about 1 inch from top.

Ingredients

  • 2 lbs ground chuck
  • 1 lb Italian sausage
  • 3 15 oz cans chili beans
  • 1 15 oz can spicy chili beans
  • 2 28 oz cans diced tomato w/green chili
  • 6 oz tomato paste
  • 1 lg chopped onion
  • 3 stalks of celery diced
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 2 diced jalapenos (remove seeds for milder)
  • 1 tbsp crisp bacon bits
  • ½ c beer
  • 3 tbsps chili powder
  • 1 tbsp ancho chili pepper powder
  • 1 tbsp worcestershire
  • 1 tbsp minced garlic
  • 1 tbsp dry oregano
  • 2 tsps ground cumin
  • 2 tsps hot sauce
  • 1 tsp dry basil
  • 1 tsp cayenne powder
  • 1 tsp sugar
  • 1 tsp paprika

Instructions

    Brown meats in a lg stock pot, drain fats. Add all other ingredients in order listed, over medium heat while stirring bring to a boil, Reduce heat to a low simmer, Cover and simmer for stirring occasionally.
