Black Bean Cupcakes

Ingredients
Adjust servings and measurements

black beans, rinsed and drained
5
large eggs
½ tsp
salt
¼
cold brewed coffee
1 tbsp
vanilla
8 tbsps
butter
⅔ cup
honey
6 tbsps
cocoa powder
1 tsp
baking powder
Instructions
Keep screen awake

Preheat oven to 350 degrees.

Place beans, 3 eggs, salt, vanilla and coffee in blender and blend until smooth.

sift cocoa powder and baking powder together.

Cream butter and honey. Mix in remaining eggs and beat
1 minute
after each egg. Add bean mixture and beat
1 minute
. Add cocoa powder and beat
1 minute
.

Add batter to cupcake holders in muffin tin. Fill almost to the top. They will not rise much.

Bake for
25-30 minutes
.

Frost with whipped cream frosting.

Place cupcake in small glass jar. Frost. Add another cupcake and frost again. Place lid on jar and refrigerate. May freeze.
