Black Bean Cupcakes

Ingredients

  • 1 can black beans, rinsed and drained
  • 5 large eggs
  • ½ tsp salt
  • ¼ cold brewed coffee
  • 1 tbsp vanilla
  • 8 tbsps butter
  • ⅔ cup honey
  • 6 tbsps cocoa powder
  • 1 tsp baking powder

    Preheat oven to 350 degrees.

    Place beans, 3 eggs, salt, vanilla and coffee in blender and blend until smooth.

    sift cocoa powder and baking powder together.

    Cream butter and honey. Mix in remaining eggs and beat after each egg. Add bean mixture and beat . Add cocoa powder and beat .

    Add batter to cupcake holders in muffin tin. Fill almost to the top. They will not rise much.

    Frost with whipped cream frosting.

    Place cupcake in small glass jar. Frost. Add another cupcake and frost again. Place lid on jar and refrigerate. May freeze.
