Bicycle repair strawberry meringue roulade

Some people can make a world winning roulade. So to make things a little more tricky, this recipe combines fixing a bike in the kitchen at the same time as trying to make the roulade. It also has the added bonus of shifting some spare egg whites after the previous night's world winning creme brulee.

Ingredients

  • 5 Egg whites
  • 275 gm Caster sugar
  • 50 gm Flaked almonds
  • 150 ml Double cream
  • 200 ml Greek yoghurt
  • 225 gm Strawberries, hulled
  • 1 Broken bicycle

    Pre-heat oven 200°C/180°Fan/Gas 6. Bring the bicycle into the kitchen.

    Line a 13" x 9" (33 x 23 cm) swiss roll tin with greased non-stick baking paper. Turn the bicycle 180 degrees onto the saddle.

    Whisk the egg whites, in a clean, large bowl in an electric mixer on full speed until very stiff. Gradually add the sugar, a teaspoon at a time, and still on high speed, whisking well between each addition. Whisk until very, very stiff and glossy and all the sugar has been added. Do an inspection of the bike and find that the gears no longer work after Sean's prior servicing work.

    Spread the meringue mixture into the prepared tin and sprinkle with almonds. Place the tin in the pre-heated oven and bake for about until very golden. Then lower the temperature to 160°/140°Fan/Gas 3 and bake the roulade for a further until crisp and firm to the touch. Re connect the cable to the gear change mechanism and make sure it is reasonably tight.

    Remove the meringue from the oven and turn almond side down on to a sheet of non-stick baking paper. Remove the paper from the base of the cooked meringue and allow to cool for about . Adjust the cable at the gear changer on the handlebar so that it engages the correct gear at the right setting.

    Lightly whip the cream, mix with the yoghurt. Spread evenly over the meringue. Cut the strawberries into quarters and sprinkle over the cream mixture. Roll up the meringue firmly using the paper to help you, from the long end to form a roulade, it is essential to keep the roll very tight. Wrap in non-stick baking paper and chill before serving. After testing, turn the bicycle back onto its wheels and do that smug look to show-off your repair skills.
