Best easy chocolate cake

This recipe is quick and easy to make. Makes a nice moist cake that keeps really well. In fact it is better after a couple of days

Ingredients

  • 2 cups flour
  • 2 tsps baking powder
  • 2 tsps baking soda
  • 1 tsp salt
  • 2 cups sugar
  • 150 gm butter (Melted)
  • ½ cup cocoa
  • 2 eggs
  • 2 cups boiling water

    In a large bowl sift together flour, baking powder, baking soda and salt. Stir in the sugar.

    In another bowl melt the butter then beat in cocoa. Beat in the eggs then add the boiling water and mix together well.

    Add the wet mixture to the dry mixture and beat together until well mixed.

    Line a cake pan with baking paper. Pour the cake batter into the cake pan. Please note the mixture is very runny.

    Bake @ 180 centigrade for .

    When cooked cool on a cooling rack before icing.

    For the icing: melt 125 grams of dairy milk chocolate and stir in up to 100 mls of cream to make a smooth spreadable ganache. Pour over the cooled cake and leave to set.
