Ingredients

  • 1 tbsp olive oil
  • 2 lbs stew beef
  • 2 cups carrots (diced)
  • 2 cups potatoes (chopped)
  • 1 cup onion (chopped)
  • 2 garlic cloves (minced)
  • 1 cup celery (diced)
  • 2 cups leeks (chopped)
  • 1 cup mushrooms
  • 3 sprigs thyme
  • 3 bay leaves
  • 10 cups beef broth
  • 1 cup water
  • 1 cup fresh peas
  • 1 cup pearl barley

    Heat olive oil in a dutch oven or large pot over medium-high heat. Generously salt and pepper beef. Once the pot is hot add beef in batches to brown all sides. Remove beef from pot and set aside.
