BBQ ribs with coffee brine

Ingredients

  • 32 oz strong coffee
  • ¼ c kosher salt
  • ¼ c brown sugar packed
  • ¼ c rib rub my recipe
  • 7 pounds spare ribs or your favorite ribs

  • 2 ½ tbsps coarse black pepper
  • 1 ½ tsps chili powder
  • 1 ½ tbsps garlic powder
  • 1 ½ tbsps onion powder
  • 1 tsp cayenne
  • 2 tbsps kosher salt

    Make rub, place all rub ingredients in a medium mixing bowl, stir together until completely blended, no lumps. Make the coffee brine using: the ingredients above, Pour the hot coffee in a lg non reactive container, stir until dissolved, place in refrigerator until cold.

    Peel membrane off off back side of ribs, place in a sealable lg container and pour coffee brine over ribs making sure ribs stay under brine, refrigerate for . After ribs are brined remove from brine and discard brine, wash ribs off thoroughly under cool water, while still wet rub generously with rub, bone side first then meaty side and place on smoker rack. when they are all racked up turn smoker on to 240, run ribs while applying smoke for , remove from smoker and wrap in foil

    Place foil wrapped ribs back in smoker for at 240., Pull out of smoker and unwrap, paint bone side heavily with BBQ sauce then meaty side and place back on rack, place ribs back in smoker at 240 for 1 more hour. There done.
