BBC Food salmon and brown rice

Ingredients

  • 200 g brown rice
  • 200 g beans (soya or broad)
  • 1 cucumber diced
  • 1 bunch spring onions
  • 2 tablespoons coriander
  • 1 chilli sliced and deseeded
  • 2 salmon fillets
  • 4 tsps soy sauce
  • 1 lime - zest and juice

Keep screen awake

    Cook the rice. before it is cooked, add the beans
  • 2
    Cook the salmon fillets. Leave to cool and flake
  • 3
    Fold salmon, cucumber, coriander and spring onion into rice and beans
  • 4
    Mix together soy sauce, chilli and lemon zest and juice in a bowl. Pour over rice mixture
