Banana Muffins - Gluten Free

Ingredients

  • 1 cup sugar (½ c stevia blend, monk fruit and ½ cup coconut sugar)
  • ½ cup shortening (¼ c butter and ¼ c coconut oil)
  • 1 tsp vanilla
  • 2 eggs, beaten
  • 3 ripe bananas
  • 1 pinch salt
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1-½ cup flour (Gluten free cup per cup)

    Preheat oven to 325 degrees.

    Mix dry ingredients together.

    In mixer combine sugar or substitutes with butter, oil, eggs, vanilla and bananas.

    Remove from mixer and stir in dry ingredients by hand until just incorporated in.

    Fill muffin tins using a muffin size scoop. Bake for .
