Banana Bread in a Can

This banana bread is great to have on hand. I usually make a double recipe or more at a time. I have great success with this for bake sales or after service coffee.

Ingredients

  • ¾ cup peanut oil
  • 2 beaten eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1 ½ cups sugar
  • ½ tsp salt
  • ½ cup milk
  • 2 mashed bananas
  • 1 tsp baking powder
  • 1 tsp soda
  • ½ cup pecans or walnuts (optional)

Keep screen awake

    Preheat oven to 350 degrees.

    Mix oil, eggs and vanilla well. Mix dry ingredients and add. Mix all together. Beat with electric mixer until batter is smooth. Spray four 15-ounce cans with cooking spray. Pour batter into can 1/2 full. Bake at 50 degrees for or until toothpick comes out clean. Let cool to touch in cans.

    Remove by turning out onto a tray. Wrap in plastic wrap to store. May be frozen.
