Bacon & Mushroom Pasta

Ingredients

  • 1 Onion (chopped finely)
  • 1 Broccoli (cut into small florets and stalk diced)
  • 2 Garlic cloves (Chopped finely)
  • 5 slices of bacon (chopped)
  • 1 butter (knob)
  • 5 Mushrooms (medium size) (Sliced)
  • 125 g Sour Cream
  • 1 tablespoon Mustard
  • 1 packet Pasta

    Bring a pot of salted water to the boil (for pasta - use a kettle to boil water first to speed things up).

    Prep - cut 1 broccoli into florets and dice stalk; slice ½-1 onion; chop 2 cloves garlic; chop 1 pack bacon.

    Pasta - cook 2 cups pasta in boiling water for , stirring occasionally, until just tender. Add broccoli in the last . Drain well and shake to remove excess water.

    Sauce - heat knob of butter and little oil in a fry-pan on medium-high heat. Cook onion, garlic and bacon for , stirring, until starting to colour. Add a splash of water if anything sticks.

    Add ½ pack mushrooms, ¼ cup water, 1 tsp mustard and ¼ tsp salt to pan and cook for , until mushrooms are tender and nearly all the liquid has evaporated. Rub the bottom of the pan to release pan brownings.

    To serve - remove pan from heat and stir through 125g sour cream. Return pasta to pot it was cooked in, along with sauce. Combine, season and serve. Sprinkle over walnuts.
