Bacon and Spinach Quiche

Ingredients

  • 1 piecrust
  • 1 cup milk
  • 5 large eggs
  • ½ tsp salt
  • ¼ tsp pepper
  • 4 slices bacon, cooked and chopped
  • 1 cup shredded Swiss cheese
  • ¼ cup grated parmesan cheese
  • 1 cup fresh baby spinach leaves, chopped
  • 2 scallions, thinly sliced

    Preheat oven to 425 degrees. Line a 9 inch pie plate with crust and crimp the edges.

    In a medium bowl whisk milk, eggs, salt and pepper. Set aside

    On crust, layer bacon, cheeses, spinach and scallions. Pour egg mixture over the top and bake .

    Reduce heat to 325 and continue baking 20-25 more minutes. It is done when a knife inserted in the middle comes out clean. Remove from oven and let rest for before serving.
