Chop onions, bell peppers, and mushrooms. You may add other veggies that you like too. Add these to a small zip-lock freezer bag.

Grate the cheese and add to the zip-lock bag.

Add salt and pepper to taste in the bag

Crack eggs into the bag. After removing the air from the seal and mix the everything in the bag.

Place bag in the freezer. Before leaving for the hike remove eggs from freezer and insulate in clothes. If kept there they will still be cold and nicely thawed for the morning. Serve with tortillas.
