Asparagus Beef Stir-fry

Serves 4

Ingredients

  • 2 tbsps cornstarch
  • 1 cup Beef broth
  • 3 tbsps soy sauce
  • ½ tsp Sugar
  • 2 tbsps Vegetable oil (or olive oil)
  • 2 whole garlic cloves
  • 2 lbs Fresh Asparagus (trimmed and cut into 2.5 in pieces.)
  • 2 Medium onions (halved and thinly sliced)
  • 1 Medium sweet red pepper (julienned)
  • 1 Large carrot (cut into 2.5 in strips)
  • 2.5 cups sliced cooked roast beef strips (2.5 in. strips)
  • 1 cup salted cashew halves (optional)

Instructions

    In a small bowl, combine cornstarch and broth until smooth.

    Stir in the soy sauce and sugar; set aside.

    In a wok or large skillet, heat the oil; add garlic.

    Cook and stir for two minutes or until lightly browned; discard garlic
  • 5
    Stir-fry the asparagus, onions, red pepper and carrot for or until crisp and tender.

    Add roast beef; heat through.
  • 7
    Stir reserved sauce; add to the pan.
  • 8
    Bring to a boil; cook and stir for or until thickened.
  • 9
    Sprinkle with cashews.
