This chilled rice salad has spicy undertones. Carrots, green onions, and peanuts help punctuate the salad with authentic Asian flavor.

Note: After putting in Prep and Cook Time. Put an additional; 2 hours, for Chill Time.

Ingredients

  • 1 package Near East Rice Pilaf Mix (6.09 ounces)
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 clove garlic (minced)
  • ¼ teaspoon crushed red pepper flakes
  • ½ cup diced carrots
  • ¼ cup chopped peanuts
  • ¼ cup chopped green onions
  • 2 tablespoons diced red bell pepper
  • Chopped peanuts (optional)

Instructions

    Prepare rice according to package directions, omitting butter or olive oil.

    Stir in next 8 ingredients, Chill for . Top with extra chopped peanuts right before serving. if desired.
