The original recipe calls for the addition of salt. For health & taste reasons, I omitted that & also recommend using unsalted butter.

Ingredients

  • ⅔ c. apricots (dried)
  • ½ c. butter (unsalted; softened)
  • ¼ c. sugar
  • 1 ⅓ c. flour
  • ½ tsp baking powder
  • 1 c. brown sugar
  • 2 eggs (well beaten)
  • ½ tsp vanilla
  • ½ c. pecans (chopped)
  • water

    Preheat oven to 325° F. Grease 8-in. square baking pan.

    Rinse apricots & put in small saucepan.

    Cover apricots with water & boil .

    Drain, cool, & chop.

    Blend together butter, white sugar, & 1-c. flour; then press into pan.

    Mix together remaining flour & baking powder.

    Gradually beat brown sugar into eggs.

    Blend apricots, flour-baking powder, vanilla, & nuts into brown sugar-eggs.
