Applesauce Snack Cake

Ingredients

  • 2 eggs
  • 1 orange or lemon (zest)
  • 2 cups unsweetened applesauce (Preferably homemade)
  • ½ cup honey (orange blossom is best)
  • ⅓ cup canola oil
  • 2 cups brown rice flour
  • 1-½ tsp baking soda
  • ½ tsp pumpkin pie spice or cinnamon
  • ½ tsp salt

    Preheat oven to 350 degrees. Coat a large bundt pan with cooking spray.

    Puree eggs, zest, applesauce, honey and oil in blender of food processor. Whisk flour, baking soda, pumpkin pie spice or cinnamon and salt in a large bowl. Pour wet ingredients into dry ingredients. Stir until well combined. Immediately spread into prepared pan.

    Bake until golden brown and the cake springs back when lightly touched - . Let cool in pan for before turning out onto a cooling rack.
