When I inherited my mother-in-law's recipe collection, I found this written on an old, yellowed, index card, tucked into a 1933 cookbook.

I always recommend using unsalted butter. It's healthier & makes the finished product taste better.

Ingredients

  • 1 egg
  • 7/12 c. sugar
  • 1 c. flour
  • ½ tsp cinnamon (ground)
  • ¼ tsp nutmeg (ground)
  • ½ c. milk
  • 3 tbsps baking powder
  • 1 c. oats
  • ¼ c. shortening
  • 1 apple (large)
  • 2 tbsps butter (unsalted)
  • 9 halves pecans ()

Instructions

    Preheat oven to 3750° F. Grease 9-in. round cake pan. Melt shortening & butter in separate pots. Pare apple & slice thinly.

    Beat egg & ⅓-c. sugar together till light. Stir in flour, baking powder, & milk, till just blended; then stir in oats & shortening.

    Spread ½ of batter in cake pan. Cover with apples in single layer; pour remaining batter on top.

    Mix together cinnamon, nutmeg, ¼-c. sugar, & butter. Sprinkle on top of batter. Place pecans on top.

    Bake . Serve hot.
