nice recipe for cupcakes, loafs or 9x13 cake pan. with peeled apples, carrots or pumpkin puree.

Ingredients

  • 2 c granulated sugar
  • 2 eggs
  • 1 ½ c plumped raisins
  • ½ c oil
  • 2 tsps cinnamon
  • 1 tsp nutmeg
  • ¼ tsp allspice
  • 1 tsp ginger
  • 1 tsp salt
  • 2 tsps baking powder
  • 2 c flour
  • 4 c shredded carrots, apples or pumpkin

    .Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9X13 inch pan. In a large bowl, blend the sugar with the eggs. Add the oil, raisins, cinnamon, nutmeg, allspice, ginger, salt, mix well, mix baking soda with flour and mix into wet ingredients mix just until blended then stir in fruit.

    Pour batter into prepared pan. 3.Bake for . Serve warm or cooled. you can also pour into paper lined cupcake tins. bake until toothpick comes out clean.

    use 2 15 oz cans pumpkin or 4 c fresh pumpkin. makes about 22 cupcakes, fill them up to the top, they don’t rise much, great pumpkin muffins. muffins need to cook .
