Apple and Spice Baked Oatmeal

Delicious for brunch or breakfast potluck 250 calories each 47 grams carbs

Ingredients

  • 2 tbs Honey
  • 2 cups Chopped apples
  • ¾ cup Golden raisens
  • 1 tb Cornstarch
  • ¾ tsp Cinnamon
  • ¼ tsp Nutmeg
  • 1 cup Quick oats (Gluten free)
  • ⅓ cup Chopped walnuts (Or pecans)
  • ½ tsp Baking powder
  • 1 cup Milk
  • 1 Egg
  • 2 tbs Honey
  • 1 tsp Vanilla extract

    For the apple filling: in a large pot, combine 1/3 cup water, 2 Tbs honey, apples, raisens, cornstarch, cinnamon and nutmeg. Bring to a simmer over low and cook, stirring occasionally about .

    Preheat oven to 375 degrees. Spray a 8x8!baking pan with Pam. Put apples in the bottom.

    In a bowl combine oats, half the nuts, baking powder and pinch of salt. Pour over apples.

    In another bowl whisk together milk, egg, honey and vanilla. Pour over oats.

    Sprinkle remaining nuts over top.

    Bake about until top is golden brown.

    Cut into 6 rectangles.
