1 tablespoon yeast (I use active yeast (red star))
1 ½ teaspoons salt
¼ cup oil
5-6 cups flour (i like to use a high gluten flour)

make sure your two cups of water is between 100 and 110 degrees Fahrenheit ( if to cold the yeast will not wake up, if to hot, you may kill the yeast) in a large mixing bowl, mix the two cups water, 2/3 cup sugar, and the tablespoon of yeast stir until you can no longer discern the dried yeast granules. let set for about . after you see a bubbly froth on top of the water, then add rest of the ingredients ( the salt,oil, and flour. ) mix until all the wet dough is in a ball then you can knead it with your hands for about . or until the dough feels smooth. cover bowl and let raise for about three hours in warm place.

punch dough down and cut in half make into two loaves or make into 24 rolls( I make mine about the size of a walnut.) I also use this dough for my pepperoni rolls, or cinnamon rolls. it is easy and always turns out perfect.
