Almost Paleo Granola

Ingredients

  • 1 cup chopped pecans
  • 1 cup chopped almonds
  • 1 cup chopped walnuts
  • 1 cup gluten free rolled oats
  • ¾ cup chia seeds, dry
  • ¾ cup hemp seeds, raw and shelled
  • ½ cup ground flax seeds
  • 1 tsp salt
  • 2 tsps cinnamon
  • ⅓ cup coconut oil
  • ½ cup honey, agave, or maple syrup
  • 1 tsp vanilla extract
  • 1 egg white (helps granola stay in lovely large chunks, instead of little crumbles)

Instructions

    Mix chopped nuts, oats, seeds, cinnamon, and salt in a large bowl.

    In a separate bowl, mix coconut oil (melted), honey (or other sweetener), vanilla and egg white. Whisk until combined.

    Pour liquid ingredients over dry nut mixture and mix well to combine, scraping bottom and sides as you go.

    Spread out on jelly roll pan covered in parchment paper. Press down.

    Bake in 300 degree oven for , stopping once at to stir then press down again.

    Let sit for to cool and get those delicious large pieces. Use spatula to move into airtight container.
