Ingredients

  • 1 c. butter (Use unsalted butter. It's healthier & makes the cookies taste better.)
  • ¾ c. sugar
  • 1 egg
  • ½ c. almond paste
  • 1 tsp almond extract
  • 2 c. flour
  • 2 ½ oz almonds (sliced)

    Separate egg. Bring butter to room temperature. Preheat oven to 375° F.

    Gradually beat sugar into butter till mixture is light & fluffy. Beat in egg, oil, almond paste & almond extract till well blended.

    Stir flour into mixture.

    Spread dough into 13x9x2-in. pan.

    Beat egg whites till foamy. Brush over surface of dough.

    Sprinkle top of dough with almond slices.

    Bake till lightly browned (app. .).

    Cool pan thoroughly; then cut into bars. Store in airtight containers.
