Ingredients

  • 1 c. butter (unsalted)
  • 1 c. sugar
  • 1 egg
  • 1 tsp almond extract
  • 2 c. flour
  • 1 c. almonds (blanched & finely ground)

    Bring butter to room temperature. Separate egg. Lightly grease 13x9x2-in. pan. Preheat oven to 425° F.

    Gradually add sugar to butter, beating till light & fluffy. Add egg yolk & beat well.

    Stir almond extract into mixture.

    Gradually add flour & almonds to mixture; stir till well blended.

    Press dough into pan & bake till lightly browned (app. .).

    Cut into 2-in. squares while still warm; then cool completely on wire rack.
