Ingredients

  • 2-½ cup almond flour
  • ¾ tsp baking soda
  • ½ tsp fine sea salt
  • 3 large eggs
  • ⅓ cup ripe banana (or apple sauce)
  • 2 tbsps honey
  • 2 tbsps coconut oil, melted
  • 1 tsp vinegar (white or cidar)
  • 1 tsp vanilla extract (can use other flavors)
  • 1 zest of lemon or orange
  • 1 cup fresh or dried fruit
  • ½ cup chopped nuts or seeds
  • 1 tsp cinnamon - optional (use with apple muffins)

    Preheat oven to 350 degrees. Line 10 cups of muffin tin with paper liners.

    In a large bowl whisk together almond flour, baking soda and salt. Stir in any dry spice like cinnamon. In a small bowl whisk the eggs, applesauce or banana, honey, oil an vinegar, extract and zest. Add wet ingredients to dry ingredients stirring until blended. Fold in any fruit and nuts.

    Divide batter evenly among 10 muffin cups. Bake in preheated oven for until let in the middle and brown around the edges. Cool in tin for .

    I have made these using fresh apples, raisens and walnuts with applesauce and cinnamon. I have also used dried fruit such as 1/4 cup each raisens, dried apricots, dried blueberries, dried cherries, dried dates, pecans and sunflower seeds.
