À La King Sauce

This recipe makes 2 1/2-c. of sauce.

Ingredients

  • 1 lb peas (canned)
  • ¼ c. butter
  • ¼ c. flour
  • ½ tsp salt
  • ¼ tsp mustard, dry ()
  • ⅛ tsp pepper
  • 1 ½ c. milk
  • 4 oz mushrooms (canned)
  • 2 tbsps pimiento pepper (chopped)

Instructions

Keep screen awake

    Drain peas, reserving liquid. Melt butter over low heat. Drain & slice mushrooms.

    Blend flour, salt, mustard, & pepper into butter; then heat till mixture bubbles.

    Remove from heat. Stirring rapidly, gradually blend in 1/2-c. of reserved pea liquid & milk.

    Return to heat. Stirring constantly, rapidly bring to boil. Continue stirring & cook .

    Blend in peas, mushrooms, & pimientos.

    Stirring occasionally, cook over low heat till heated through.

    To keep sauce warm, cover & place over simmering water in top of double boiler.
